Default RPM Dead zone 2-3K

OK so something weird is happening with my 95 jimmy. Right now it idles fine, and when just puttering along it seems to do fine, but after about 5-10 min on the road if you gun it it will have a dead spot in the rpm zone where it will sputter and hesitate for about 2 seconds then it will catch itself and go over 3K all the way to red line, now it doesn't always do this, but a good deal of the time it does. Also sometimes when just cruising down the highway at 65 it will hesitate and sputter a little, then stop, then later will do it again.

I have replaced a lot of sensors in the car recently, also has only about 8K on spider, brand new fuel filter.

Plugs changed about 8K miles ago, and it doesn't have a MAF sensor.

One thing I forgot to mention is I plugged in a fuel pressure gauge and it runs between 55-60, well once I did that oddly enough it started having a rough idle. I then cleaned the IAC and it smoothed out the idle. Im not sure if its coincidence or not though...
