Default 97 Blazer Cooling temp

My blazer was overheating so I replace the water pump and eliminated the thermostat (live in Miami ), so now with the new water pump and no thermostat the temp gauge it's not passing the 110 dgs any one could tell me if I have to replace the temp sensor o that's ok without the thermostat
