Question Offset Rims?

I have a 1997 GMC Jimmy 4x4 and i want the front and rear more offset but some one told me that there hard to find offset rims for and i was woundering if this was true?
-I also looked into wheel spacers but i go off roading alot and iwas woundering if there would be any problems with them-

I went with wheel spacers/ adapters on ebay.

As far as offset...if that is similar to backspacing i went with camaro wheels at 4.5 backspacing
So i think it would be safe to say that any wheel that will fit a camaro would fit your ride. However you
May exp rubbing issues. Just my thoughts.
