Exclamation New here, 93 blazer with hesitation issue

Just joined the forums after picking up a 93 s10 blazer from a friend at work. He has put a LOT of work and parts into it within the last few months before selling it to me because he had too many vehicles. Anyways, the body is pretty rough with rust and dents but mechanically it is sound, except for the hesitation issue. it seems to be lacking power at all speeds, even when you floor it all you get is a slow acceleration.

Here are the parts he replaced within the last few months:
Distributor, cap, rotor, wires, plugs
throttle position sensor
idle air control valve
fuel pump, tank, straps, filter, sending unit, and all fuel lines
coolant temperature sensor
front calipers, rotors, pads, wheel bearings
blower motor and heater core
master cylinder
alternator
starter
door hinge pins and bushings
oil change
trans fluid and filter
rear diff fluid
pcv valve
air filter
timing chain and lower intake gasket
water pump, hoses, and thermostat
belt
fan clutch
tail lights, bumper, and grill

I knew that he never replaced the fuel injector and regulator and when i pulled the upper plenum off i could tell it was leaking on the passenger side and i thought it might have something to do with the lack of power, so i replaced it but it is still the same. I also changed the egr valve. The only things that i think would be causing this that haven't been checked/replaced would be the oxygen sensor, catalytic converter, or the torque converter. I have a new 02 sensor but haven't had time to put it in yet. Any ideas anyone? thanks

also it is 2wd 125k miles. i did a fuel pressure check and it was within specs, which i figured it would be with a pretty much entire new fuel system.

If your cat is plugged it will cause back pressure and lack of power..try removing it and run it to see
