New Owner, New Member, Transmission Question

I just bought a 2000 Jimmy for my son to use in college. The vehicle has 125K miles total and is in very good condition (no rust, no leaks). It has a sticker from 2010 announcing it has a Jasper rebuilt engine so I am assuming it probably has about 50K or so on the current engine.
I did notice one thing - under HARD excelleration at 30 MPH it shifts down to 1st? At that speed instead of speeding up its almost as if you've stepped on the brake (should stay in 2nd)? No other transmission issues besides that.
No documentation on service history (original transmission oil?) but the previous owner did write the type of oil to use in the transfer cases in the margins of the owners manual -so maybe he did service it in the past. Originally owned by an older couple who had it loaded up with equipment (sun roof, leather, power and heated seats in the front etc...) that passed it onto to a grandson who drove it while then traded it for a full sized 4X4.
I plan to pump the pan empty, refill, drive a week, pump it empty again and refill, drive another week then pump it empty and drop the pan and replace the filter and refill. This is the "old" Mercon/Dextron III fluid correct?
