Sounds like it may have a big carbon build up. Usually an engine will only run on for a few seconds, even if it has a large carbon build up. Or, it's a Diesel...

will this carbon buildup continue to make my engine run everytime after shutting it off?

How long does it stay running? I've had old cars "diesel" from carbon buildup before. Usually it's only for a few seconds, seven or eight at the most. The carbon heats up, and acts as a source of ignition to keep burning fuel, and keep the engine turning for a second or two, although pretty crappily sounding, and mostly in front of all the cool kids at your high school...

According to my mechanic, he hsd enough time to disconnect battery spark plugs and fuses! So id say a couple of minutes

I have heard of that happening, but I thought it was just an old wives tail. If it was an old worn out engine(turns over easy, low compression, lots of carbon) I guess it would be possible.

I wonder if some seafoam would clear up something like this? I've never used it myself, but everyone who has seems to have good things to say about it.

The only times I've had an engine continue to run were when I used Seafoam. It would be breaking the carbon loose which would have more exposed surface area allowing it to pick up more heat and continue to run until it used up the residual fuel in the intake runners.
Yes Seafoam will help but you're going to need to do it a few times and really beat on it between cleanings to remove as much carbon as possible each time.
