Engine sputter when accelerating

I have a 1985 S-10 Blazer 2.8L V6. I just put a crankshaft kit in it and new gaskets on everything. It had been sitting for 4 years before I decided to fix it. When I started the repairs I had to clean a massive rats nest off of the engine. I have still yet to repair all of the vacuum line and wires chewed up on it. It will start and run fine the timing is set to specs from Chilton manual. When I take off it seems fine but when I get on the road and start to accelerate it will spit sputter and sometimes almost die other times it will backfire and accelerate a little and start sputtering again. I put some Seafoam cleaner in the gas tank to help clean the carburetor out.
I almost forgot I had to put a new fuel pump on it because the old one looked like it had been beaten out from the engine because it was bowed out. When I let it idle it sounds almost as if there is a knock from the fuel pump any ideas on that.
