Default Ideal Running Temp?

Could anyone tell me what the ideal running temp is for the v6 vortec? My jimmy is running at around 130 and it seems a little cool. Thanks.

The factory thermostat is 195 degrees and the engines normally run between that and ~205 degrees.

Yep. Sounds like your stats stuck open..Not a big deal, just replace. Does the temp rise a little when at a redlight then drop back down when you move?
