Default Need Help With my trucks hiccup/hesitation!

Alright. I need help figuring out what the hiccup on my truck is. I've done a lot of workto rthe truck so I'll try to name it all. Its a 2000 4.3 with a Cam, Cold air intake, Short tube headers to a custom magna flow exhaust, Egr delete and block off plate, Throttle body mod, and a Wait 4 Me tune. The problem is off idleonly iI have a hiccup/hesitation where the truck starts to go, Bogs down or hesitates then continues to go on its way perfectly past that point. Now ti did some digging around the truck and I found out if you unplug the maf sensor the hesitation goes away and the truck drives as if I wish it would. So I had replaced the maf sensor and still not an ounce different and the problem consists still. I also took some carb Cleaner and sprayed around the intake and throttle body to see if there's a vacuum leak after the maf sensor causing off a/f ratios but I couldn't find anything or get the idle to spike up from the carb cleaner. Anyone have any help or tips on what to try and do? Thank you in advance for your help!

Well I also deleted it because when getting my computer tuned I had got another PCM from my old truck which never had an egr. So that one had been tuned to run with it ever so I had made a block off plate for it
