IAT Sensor Relocation Results
Relocated my IAT sensor today, as well as insulated the intake box (says Vortec on it) with thermal insulation tape. Will take pics when the sun is up.
Here are the results, ambient temp was 75F in the before and 73F in the after:

This one's a closeup of the new IAT sensor location, it's hard to see due to low light.

Just finished the whole roll of tape on the rest of the intake, going for a drive now to see if it helped!
EDIT: Thermal tape over the entire box as opposed to just the side facing the engine didn't make much of a difference.
