Default 2000 blazer electrical help

I turn the key off to the blazer, all gauges drop to zero or the left like they should. Then 30-60 seconds later the fuel goes to full and oil psi goes up to about halfway. What would cause this?

On my Jimmy this was happening and I disconnected the battery and turned on the headlight switch for a couple minutes and then reconnected it. It hasn't done it again in a few months now.
