Redone my brakes over the weekend and decided to make sure the ABS was working ok. Jammed brakes and the truck stalled out. It only did this once and it started right back up. Any ideas what caused this? It is a CPI vortec so it wasnt a carb issue.

Might have been the brake booster acting up, or maybe the IAC just didn't react fast enough to keep it running..

Welcome to the forum! If you want help with your particular issue you should make your own thread in the proper section. I'm sure the guy who started the thread would like his problem solved and is looking for solutions, not more people with problems. Easy mistake to make seeing as you're new. I hope you enjoy your time here and find the answers you are looking for. The search option is also really handy.
