All you need is a pen and some paper... Fill up the tank. Reset the trip meter. Drive. Next time you fill up, record the miles on the trip meter. Record how much fuel you put in the tank, filling it. Try to be consistent (ie. when the pump shuts off, do not keep topping it off to the next full dollar). Divide the number of miles driven between fill ups by the gallons pumped to fill the tank. There is your actual calculated mileage.

I believe that truck holds 17 gallons. Mine holds close to that.

And yes, do this several times to get an average.
Trust me, when you are out mudding, you don't want to try and figure your gas mileage.
