Trouble with struggling while accellerating
So when I accellerate, My car struggles to get to speed. Almost like its starving for fuel and it starts spitting and sputtering. Most of the time from a dead stop, but sometimes when I step on the gas to pass or gain speed. I couldnt see any signs of exhaust leaks (I just redid the whole system anyway). Could the plugs and wires/cap and rotor do this? Something internal maybe? Any ideas would be helpful Im lost.

You have to have fuel delivery, spark and compression all at the correct sequence. Any other work besides the exhaust? The cap, rotor, wires and plugs could be contributing but from your description sound fuel related. Simple things first. Try checking and/or replacing these. Hope others will provide more.
1. Pull any codes and repair as needed
2. Air filter
3. Fuel Filter
4. Did you change your cat during the exhaust job, if not maybe the old one is clogged
5. Fuel pressure
6. MAF/MAP sensor
7. O2 sensors
8. Bad fuel
9. Engine overheating
There are too many more to list here. Hope this helps some.

Air filter is a new k&n, cat is a magnaflow high flow, maf was cleaned when I did the filter, I did the o2s with the exhaust and the computer isn't turning out any codes. What helps create the fuel pressure? Just the pump?

Yes, the fuel pump in the tank creates the pressure; however, a clogged filter or other fuel delivery problems could cause the symptoms you describe. I suggest you do a search on this forum for fuel+pump and you will find all the info you can read about the Blazer fuel delivery method. Could be something completely different tho.

I did a lot of the repairs suggested here, I had problems accelerating from a stop, truck seemed to stutter of hesitate, ended up being my O2 sensor
thought it was an electrical issue or fuel issue the entire time, but it had nothing to do with any of that stuff, spent $2000 in repairs when what I really needed was a $60 O2 sensor

Start of with a fuel pressure and leakdown test. There's a good write up on it in the diy section. Do the test and post back your numbers. That will help determine if you need a tune up or ifits a fuel system problem.
