95 Blazer starting issue

OK, here's my story...
I drove my 95 Blazer 4.3 "W" with VCM from Victoria, BC to Grande Prairie, AB with no problems. Prior to leaving, I replaced my fuel pump, fuel filter, cap, rotor, plugs, wires, and the spider injector. Ran with no issue for awhile after the 1300 km drive.
One night I was on the highway and noticed a severe lack of power. It felt like it was going to die when I tried to accelerate. I managed to get it home though. The next morning it fired first try, but died when I would give it fuel on the pedal. Had no time or money to get in to anything, so it sat for a few months.
Recently, I've started looking at this again. I checked fuel pressure at the test port - GOOD. Checked injector pulse - GOOD. Checked for spark at coil and all wires - GOOD. Physically watched injectors spray - GOOD. Checked all fuses - GOOD. It will run for a few seconds (sometimes longer) when I spray starting fluid in the air intake, but dies. It dies immediately when I touch the throttle.
I'm kind of stumped here...
As a side note, it has no catalytic converter (it got plugged when my spider went).
