cannot accelerate unless I feather gas pedal

so I'm in a mess Ive Been broke down for 3 weeks trying to figure out what's wrong with my 98 Jimmy it's 4.3 got about 140k miles when I got it it was sitting for a long time I redid fuel pump cleaned out the tank replaced filter distbutor cap rotor plugs wires etc even got to the point where I had it running good drove it back and forth to work every day always had this problem where it was hard to start had to tap the gas to get it to start but I was getting it home one day from my local dollar general a mile up the road and wanted to floor it to get home it acted like it was bogging out and didn't wanna go anywhere I got it home checked everything tested it tried to drive it again wouldn't go above 20 mph and high rpms was hot as hell not over heating would eventually get so hot it wouldn't move at all for a bit I read the codes replaced the maf I did the spiders just for good measure rotor plugs wires replaced again for good measure replaced tps fuel pump again fuel filter blows good fuel pressure before pump replacement was 55 low 60 under load new pump blows harder even went as far as cutting exaust right in front of pre cat to test situation improved but not better I will feather gas pedal from zero will reach up to 54mph no higher I slam pedal from zero it reaches 33 mph no higher however if I let go of pedal at that 33mph problem and press again it goes up to 54 I'm stumped and I've probably replaced almost 600$ worth of parts trying to get it to drive right no dice any advice would be appreciated thanks.

ps. I've also haven't noted that pieces of the ac coil box fell of and melted before this happened it landed on the wiring harness running the frame but I checked the wires they were covered in a protective foil

If you would like to take a different approach with diagnostics and a targeted repair process, I can help you. If so:
  1. What are your current codes?
  2. Can you monitor live data with your scanner?
  3. What are your fuel trims (4 numbers)?
  4. Can you graph O2 sensors?

can't really get live data with my scanner for some reason do old blazers like that have live data functions
