"What can I expect from these?" is a little vague to expect a lot of replies. Generic answer is they have some known issues but mine has treated me fairly well. There are some upgrades that are worth doing like the 1 ton idler arm and throttle body mod.

Maybe tell us what your expectations are, and we can tell you if it can do what you want, or what you'll have to do to get it that way.
They're pretty reliable trucks, once you fix the stuff that always breaks! Namely the fuel system, and probably lower intake gaskets (either mine were replaced before I got it, or I'm just super lucky, I've never had to do them).
A ZR2 is going to be better off road than a regular 4x4, but you're still pretty limited with tire size, and lift options. Although, depending on how hardcore you want to go, it might be plenty for what you need.

In my opinion, yes to both. It's a fairly late model domestic vehicle, so parts are easy to find and pretty cheap.
Whether or not it's an easy fix, that depends on your skill level. I'm no mechanic, but mine has 272K+ miles, and I've done everything in my driveway, with regular hand tools.
The good thing is that the 4.3/4L60E is about as bullet-proof a combo as you can find, IMHO. So just about any problem you get will usually be something "small". I've never been into mine any deeper than the upper intake plenum, and never even touched the transmission!
