Default Rim Help

I don't want to sound like a broken record, and I know there's tons of threads about this but I can't find what I need. Here's my issue, I'd like to get a set of cragar soft 8's for my truck. Now I don't know whether to base new rims off of my factory rims, or my tires, they're no longer stock. I have a 95 two door 4x4, no lift. I have stock rims with 31x10.5x15 bf all terrains on them and there is already some rub on tight turns, so rims that would cause more rub would be an issue. Now personally I'm ok with tires sticking out a bit, looks fine as long as they stick out evenly. But I'm having issues matching the soft 8's to what I'll need, and which I should base it off of. I believe mine should be 15x7 with a 5x4.75 bolt pattern and should be a 6 back spacing because of 4x4. But I don't know what I should do with offset and I can't find soft 8's with the same back spacing. So not sure if anyone has worked around this or has any advice on what I should do? Any help? Please? Haha
