Mine has a 2.8 out of a s10 pick up. What can I do to get some more horses? Any good sites to buy these products from? What kinds of engine could I swap out for in the future?

I'm not talking about winning any race's, just like 10,20 maybe 30.

well some cheaper easy ways to free up a little bit would be swapping out you air filter to a high flow one (k&N) and same for you exhaust move to a high flow and you could always cutout the cat and pipe it out so itl breath a little better
also just regular tune up (plugs, wires, cap) will help out with keeping whats supposed to be there lol
not sure how much all that will get you but it helps
also on the catalytic conv. If you have mandatory emisions tests you needa keep it in
