Default I'll drive it on the freeway to really check it

Thanks for your response. I will take it on the freeway and warm it up and then do the test to be more accurate.

You check it cold, But the vehicle must be running, Go through all gears, and then check it.

Straight out of the GM factory service manual for the 4L60E & 700R4 transmission:

"Operate the engine until the transmission fluid reaches operating temperature, (180F to 200F). Park the vehicle on a level surface. With your foot on the brake pedal, move the gear shift through each gear. Pause for about 3 seconds in each gear. Put gear shift in park. Remove the dipstick, wipe it off and reinstall it. Wait 3 seconds and remove the dipstick. Read both sides of the dipstick. Fluid level must be in the hot cross hatched area using the lowest level reading."

Edit: Transmission fluid capacity is 11 quarts: When the engine coolant reaches operating temperature, trans fluid temp may not have reached the same temperature, (takes a while to heat up 11 quarts). Drive the vehicle for ~20 minutes after the engine reaches operating temperature to make sure the trans fluid is up to operating temperature.
