95 s10 Blazer will not start without starting fluid

Hello, I have a 1995 S10 Blazer 4x4 with 130k miles. I was recently driving on the freeway and had to exit because I was loosing engine power. Once I exited the engine completely died. When I started it again, it ran rough for a couple minutes then died, after that it would not start again. Had it towed and let it sit for a few days. Then it started right up with no problems or check eng light it was running fine for 20 mins. I turned it off and it would not start again, unless I sprayed starting fluid in the intake, then it would run for 20 mins no problem but had the same issue, once it was turned off it would not start again unless I used starting fluid. I checked the fuel pressure it reads at 60psi and will stay at 60 psi for more than 10 mins without the engine running, with the engine running PSI will read between 55- and 62 PSI because the engine is running rough at idle like it is misfiring. If I rev between 2.5 and 3k RPM the engine sounds normal. So far I have changed the Fuel filter, spark plugs (AC Delco) and plug wires. I have double and triple checked the spark plug gaps and wires, all are correct. Today I am going to probably replace the cap and rotor and also the spider assembly. I am wondering if anyone has had this same issue. Any insight would be greatly appreciated.
