Gotcha, I'm gonna go ahead and swap the O2 Sensors when I have a chance to and see what trouble code pops up after that. I think I'll switch the newest one (behind the cat) with the one in Bank 1

If you have a scanner with live data, watching the sensors live is also not 100% but useful information.

Nothing super expensive, with lots of good reviews!

I don't expect it'll do everything, but at the very least it'll give us something to work with!

Its a good starting point, and you can’t get hurt for 25 bucks!

So... here are the results, I read George's post about reading O2 Sensor Diagnostics but it kind of went over my head.
The data kind of goes up and down, never really dipping below 100 and going as high as 800 when I bring the RPMs up.
If someone here can translate or point me to an explanation for dummies, I would highly appreciate that.

I’m guessing your car was warmed up when you took that vid? Was that done on the road while driving or parked?

From what I see in that vid, your cat is quite dead. B1S2 is the cat O2 sensor, and if your cat was working it would stay steady near the middle, and not fluctuate up and down like the B1S1 and B2S1 does.

If you go back and re-read the link that George sent, you’ll see where it mentions that.

Oh, and it looks like all your O2 sensors are working, so it may not make much sense at this point to go through the trouble of swapping them around.

I’d say just clear the codes and see how quickly the P0420 comes back. I’ll bet it does right away

Yeah it was quite warmed up, I had drive it around the back roads to get it nice and toasty, I was parked in my driveway.
I'll clear the code then and we'll see from there! Can't believe my O2 Sensors are all alright though, but I guess with my luck it is the cat after all.

Thanks everyone for all your help so far!!
