What brand of cap, rotor, & plugs did you use? These trucks are partial to AC Delco caps & rotors and the double platinum AC Delco plugs seem to work the best in these trucks.
Have you cleaned the MAF sensor, throttle body, and/or EGR valve? Each of these topics are covered in the Tech Article (DIY) section. A dirty MAF can cause an overall sluggish vehicle.

That's some low miles. . Nice. .
Is it too late to return those parts and get Delco?
Some other things that should be done as regular maintenance are your o2 sensors and fuel filter. These are things that need to be done regularly anyways, so you may consider doing them as well. O2 sensors are usually due around 100k, it doesn't hurt to do them a little early, I've seen them start to wig out at 85k. A partially clogged fuel filter is never good either.
You're doing the right thing by starting with normal maintenance things first.

Try a new fuel filter, but do not get WIX 33579. They are junk, MADE IN TAIWAN stamped on side. It lasted only short time after shop charged $17.69 plus labor to put it on. Replaced it with NAPA GOLD 3579 @ $15.50. So far so good, at least it says MADE IN USA on the side
