Burning oil, leaking oil, when was your last oil change?

That it could, pending on how bad the leak was/is... it also could be low enough not to hit the dipstick, but could still have some in the engine. Does your gauge move when engine running? I would tighten the drain plug and add oil. Keep an eye on it for the next few days to make sure you dont have a leak other places...

FYI, the oil drain plugs use gaskets. It might be worth getting some. I know NAPA has them but I'm sure you can get them elsewhere too. While you are at it, you might get a replacement drain plug with a magnet to collect any little bits of metal in the oil.

Also, you might inspect the underside of the body to see if you can see any oil leaking along the hoses to and from the oil filter and radiator (if you have an oil cooler).

That drain plug gasket Christine refers to is supposed to be replaced at each oil change. I doubt that is the case in common practice, but is an excellent practice. But the gasket is relatively inexpensive compared to the consequences. BTW are you aware that you are supposed to wait a few minutes after engine shut off to allow the oil to drain back into the crankcase?. That is for future references. By now, I hope you have added oil to get it up to the FULL mark. The 4.3L V6 has many common leaks. Start with the valve cover gaskets and work down to the oil pan gasket. Just do a search for more, many more. If you have a 4WD, be sure to check the remote mounted oil filter hoses !

I swap my gaskets but my plug has always leaked. About a half a quart between oil changes. I might swap the plug to see if I can prevent oil spots on my garage floor. Also if your GMC has oil coolant hoses to radiator that is one of the first places that usually leak on these 4.3s.
