Is this normal acceleration?

So I bought this 2000 LS blazer with 156k on it 2 months ago and have been replacing parts(fuel filter, thermostat, pads/rotar,some front end suspension joints, and the cleaning throttle body). It runs much better than when I got it but I feel like the power just isn't there. I have a 2014 Silverado so maybe I'm just used to newer vehicles now but this seems like it is losing power somewhere.
I have a video right here of me with my foot about 1/2 to 2/3rds down on the pedal.
Acceleration from 2.5-4k. is great but anything under is pretty bad out of first gear.
I was think of checking the TPS(revs seem to jump when pushing pedal instead of smooth increase.) and then checking my EGR.
What do you guys think?

Yeah that's normal. I've felt the same way you did for a long time because my other truck was a '99 k2500 with a 350 and tall gears, 4L80 tranny. That truck felt like a monster compared to the blazer.
I can't tell how much throttle you're giving it, but mine even at WOT isn't too much faster lol.

Cat has a rattle to it and engine gets high pitched when reving over 3k.
Is it safe to do a cat delete on this suv? I've read it should be fine if you leave the o2 sensor before the cat. Vehicle feels like it's just pathetic in first gear lately. The thing has 157k on it.
