Default Operating temp seems too low

Hi, I did some work with the coolant system of my 98 Bravada and now it seems like the operating temp is too low while driving. The work I did was to reverse flush the heater core and replace the thermostat. Since then, the needle on the temp gauge will climb until ~195, as expected, while the car heats up. But once it reaches ~195, it drops to what looks like 170-180 on the gauge and stays there. If I turn the car off and back on, the needle will climb to ~195 and then drop again. I've tried rebleeding the system to check that there are no air bubbles. Anyone have any idea what could be going on? Thanks for any help!

Stuck pin on the cooling fan clutch, I made a Topic here about that. The pin rusts.

Are you sure you did not end up with a 180* thermostat? If you still have the box, check the label.
