I'm willing to put the 4x4 back in business, especially that the winter is coming in a few months and I don't want my wife and kids stuck under a 16" inchs of snow..
How do I find out if the differential and transfer case are Working? Is that any way to test it?

That looks like a CV shaft is missing, specifically the driver side CV shaft. As cucv30 stated, you should get that fixed ASAP especially if there isn't anything through the wheel bearing assembly as the bearing assembly is made to have the tension of the axle stub shaft through it(by way of the torque applied to the retaining nut).

Should I just get a Shaft and put it back in and see if works or is that anything else I need to do ?

Take a look at the hole and make sure that the stub shaft is there(splined shaft that connects into the differential). But yes, you should be able to get a replacement CV shaft and install it, then go from there.
