also. i just noticed when i first turn my car on, i can be driving for a few minutes, and the temp stays at 100 then finally near about five minutes of driving it will go to 200 where its supposed to be. New thermostat ftw?

So i haven't really had time to check anything out...but i know for a fact something isnt right. My car lets off some pretty gasssssey fumes....straight gas...like im at the gas station....lol

Check for leaks first. if it smells only when running and no leaks i would lean toward the fuel regulator. check the fuel psi if it drops off fast when you check it its prob bypassing the fuel directly into the intake.

Yea I would be doing the checks we all have stated before driving it again!!! So as of now have you checked anything yet???

As for the fuel gauge going down a 1/4 and then up a half.. it is the nature of all fuel gauges, they arent the most accurate thing in the world.. my 1/4 is actually empty now.. if i bring my 2003 s10 blazer all the way down to the low fuel indicator light.. that means over 16 gallons has been used (in a 17 gallon tank)... As for the question about the thermostat only going up to 200 after 5 minutes.. once again.. not the most accurate thing and it takes about 5 minutes for the heat to get that high (the first few minutes it might get up to 100 which wouldnt cause the guage to move)..
One thing that seems to work for me is those ignition system cleaners every 3k miles.. some people say they are a crock but i have noticed a 1-2 mpg boost and it cant really hurt that much...

Fuel pressure can be checked with a fuel pressure tester that you can pick up from a part store for a decent price, and you check that at the shrader valves on the driver side of the motor near the firewall!! The regulator I believe is inside the manifold itself!!
