As the old saying goes, there is no replacement for displacement.
That is about the only advantage.
Rather than looking at the cubic inches, look rather at the power curve and figure out what you need for mudding. Torque in the lower end or hp in the upper end?

a 383 is just a built 350 rite? just different internals? 383 is gonna give u more snap and possibly more punch but the 350 is gonna run smoother and all around better. id stick to the 350 for a mud truck. ul have less issues with heat and such. but im partial to them 350s. u just cant beat em.

383 is a 350 with 400 crank. 383s produce much better torque in a wider range. For a mud truck either will work fine. Personally I would take a 383 over a 350 any day of the week.
A 383 built right will not run any rougher or hotter than a 350. I had a 383 in a reg cab s-10 street truck and it cooled just fine. I did have a bigger cam than the 350 I pulled out so the lope was teeth rattling.
