Noisy steering pump
You should never bleed the pump with the engine running. There is no need and it can only compound the issue especially if you don't already have all of the air out.
As far as the over night thing, it probably allowed the fluid & air to separate from the foam that you had described earlier.
The only way you can tell if the pump is ok is to get all of the air out of there one way or another. If you haven't done the isolation method I described above, do that to make 100% sure that the air is out of the system. You will want to put a lot of fluid through it to ensure that no more air comes out into the 2nd container.
