Exclamation HELP! lifting idea for spring break

Alright, once again I need your help! =]

99 GMC Jimmy SLT 4 Dr.
My plans...
- 2" PA body lift; what kit has all bumper mounts?
-T-bar crank to 1.5 and shackle for 2"

- what size tires would I be able to run with this? I recently swapped my tires onto different wheels which are also 15" but they rubbed a bit so I trimmed the inner fenders about an inch and its fine now. Note: they have a very big offset and they stick out in front almost 1.5-2" past the fenders. Why would they rub? And can I use the same wheels and run 31's with just a body lift at first? I'm going to get BFG AT tires I believe...the rims are optima, don't know what model, only that they're deeper dish, chrome, and 15"...dang sexy too! =D
