Default Temp gauge and burn smell

Hi guys, i have a 1998 blazer 4.3 vortec 4WD automatic transmission.
Recently after driving like an hour it started to smell like burn electrical wire and the temp gauge went up, but the engine was aparently cold, with full coolant level.

Now, every time i start it, after 10 minutes or so the temp gauge goes all the way up, the "check gauge" light comes on, and it starts to smell like burn wire around the engine (i think that it comes from the back of the engine).

This car has only one temp sensor in the cylinder head with two wires (yellow and black).

What could it be? What should i check first?

P.S. The engine is NOT overheating; i can even touch it with my hand. The temp gauge goes up in the exact same moment as it starts to smell like burn wire.

Thanks a lot
