Which would be better, a Zr2 S-10 or a Z71 Silverado?

PFFT that's negligable, Think about this....I get about 19mpg highway in my blazer 15-16 mixed.
My stepdad's full size awd V8 Van with 365 horsepower gets better mileage than me.
even the 2011 suburban get's better mileage.

Bushwacking is strictly prohibited and will get you banned and membership yanked where i go. They have 50 miles of trails already they don't want members making more LOL

.
Chevy trucks get better gas mileage than ford or dodge by a long shot. So I wouldn't say there's nothing worse than the blazer. But yeah, the full size and s10 will probably get about the same mpg's. You get more torque and power out of the full size but if you wheel at all, maybe you want to go down a size?

When considering a fullsize vs midsize truck, you have to be honest with yourself about how you intend to use the vehicle; prioritizing usage, wants, needs, etc. As stated already, there are pros & cons to both.
From my experience with both, the suspension & steering on the fullsize trucks is more robust than the S-series, the 5.3L v8 is at least equal to if not better than the 4.3L v6 in fuel efficiency depending on the options of the truck, better towing capacity on the fullsize, more room is definitely nice, but that comes at the expense of a larger vehicle.
If offroading comes out as the top priority for you, then the s-series is likely the better of the two in this regard given it's size & wheelbase. Both have fairly good aftermarket suspension support in terms of lift and there is no doubt that the tire size advantage goes to the fullsize for comparable lifts, but the width, length, and wheelbase all are in favor of the s-series. Approach, break over, and departure angles will all be in favor of the s-series for a given suspension lift size using the largest possible tires for that lift (not equal between the two trucks).
Regardless of what you choose, I'm sure you'll be happy with the decision.
