I looked up what size tires he had on his truck and it looks like they're 33x14"!!! And they fit on the stock rims, so 12.5" certainly will. It's just a matter of how safe they are...not sure they would be.

While they may fit, 7" is not wide enough to safely support 12.5" tires let alone 14" tires regardless of what others may have done. The sidewalls are not meant to bend in that much and can lead to premature and sometimes catastrophic failure of the tire.
The general rule is to not go 4" over the rim width. So 7" wide rim an safely support an 11" wide tire. For a 12.5" wide tire, you would want an 8.5" to 9" wide rim.
