two things to check
there are some possibles for you , one replace the coolant temp sensor and then the ignition module. many do not know that the coolant temp sensor also control fuel air mix as well. then with the ignition module when it goes bad it will give you issues when it gets hot. the module can be tested at your local auto parts store

See if you can get your hands on a fuel pressure tester. Drive with it connected to the fuel system and see what happens when the truck dies, should be a relatively easy test. If the pressure drops to 0 when the truck dies that would be a good indicator of a fuel system problem.
Crank sensors won't always look bad when removed, they can have hairline cracks that are difficult to see with the naked eye. But... if it runs off of carb clean after it dies it's probably not the crank sensor, as that would kill the ignition. Unless it's hot enough to self ignite.
I would focus on the fuel system. It sounds like that is where your problem is coming from. Check the pressure and go from there. Good luck.
