Since the engine you found is a truck motor Im assuming its tbi?if so you can swap your cpi manifold.
As for the blow head gasket drain the oil imediately.Remove the intake manifold. Then remove the head and have it checked for cracks before replacing it with a new head gasket. Also use new head bolts. You can get a set of felpro bolts they are just as good as arp and alot cheaper.

Default head gasket

well i'm not going to be able to do it myself, I called a local shop and they said it would cost me around $1000 for the repairs, should I keep calling around, or does this sounds legit?

I understand maybe your not mechanicaly inclined to do the work? You didnt mention that in your post.I assuming that 1g is to remove the head, check it for cracks and replace the head gasket?Shop around $1000 sound rediculous.

Default blown headgasket

I'm looking at both options at the moment, that being said I was looking towards replacing the gasket until I was told that once water gets into the oil it can lock up the bearings and cause the rings to start burning oil. So now i'm looking more towards the motor, the most recent motor I found the guy wants like 500 bucks for it and said he'd install it for another 500.

Thats why I mnetioned drain the oil imeddiately on the old engine. It may be or not too late depends on long it was driven once you noticed the problem.

Anyways $500 the engine and another 5 bones for install that isnt bad and its in the range for having this kinda of work done or cheaper. If I did this job for someone definately $500 is what i would charge so go for it.Does the truck engine have tbi or cpi?If it has tbi you will have to swapped the top ends.

also if the replacement is a tbi engine it will have an extremely wimpy cam compared to the cpi in your 95. It should run fine but expect power loss.
