Hanr3 has it right. Start there and remember that if you need a cat and also have an O2 sensor after the cat, you will have to duplicate the effect. Its better to buy one of those O2 sensor imitators than to try to figure out how to use two cats and only one O2 sensor. Doesnt add up and wot work right either. Single side through cat wil tell puter a lie. Better to tell puter a correct lie than 1/2 a lie. Do you have a lot of miles on yours? If not, finding a similar cat used might save a bundle.
If using the cats on both sides, your going to notice the inlet and outlet of the cats to be large. They were single cats designed to take care of BOTH sides, adaptation to smaller pipe will happen after cats. A collector to the size of the cat front inlet ought to be found. Having flanges welded to things is super way to solve some strange problems here. May well be possible to weld much of this together outside the car and install later with bolts on the flanges. Cost of flanges will be worth it in long run, though gaskets do blow out and become a problem at times.
DO NOT neglect H pipe or X over pipe. The sound of a V6 without one is not something I wish to hear.
You'll need to come down to 2.5 at the end to keep droning to the min. Anything wider will cause earaches later. The queter mufflers are actually a better sound to me, but if you really need SOUND, any loud muffler with great sounding resonator tips is best bet. Worrying about a little more cfm here or there has little effect. This makes a huge difference on HIGH horsepiower racing engines, but anything unde 250 horse cant benefit more than a couple of more horsepower just because mufflers are "less restrictive".
Like was mentioned, the best gains in true performance are made at the front of the exhaust, with headers to begin with.

The purpose of the 02 sensor behind the cat in to determine the health of the cat. If you can get oyur PCM flashed to ignore/remove a thrown code, for example P0471, your MIL won't light up.
If you have an emission sniffer test done it may raise a flag on their computer that this code cannot be read and you'll fail it. Or it might work.
I read somewhere that the Feds want to ban PCM flashes because people can skirt around things like this.
