When i changed the color of my jimmy to Burnt orange, the interior was blue. I used Krylon fusion spray paint. I'm going on 5 years now as a daily driver and other than the armrests i'm very happy with the results.

Dashes are hard to paint and unless done right will crack if you just try to paint the vinyl. Best is to swap IMHO if you are just wanting the gray

You can also stain vinyl pretty easy. And fabric store will be able to sell you vinyl stain. I would paint the plastic and stain the vinyl myself.
